RECIPE: Put 2 Tbs. butter in Dutch oven or large fry pan with lid, melt,
Add 1 chopped red onion, 2 stalks of celery chopped, 1 carrots thinly sliced or chopped, 1 sweet potato cubed, 2 tsp. old bay seasoning and some mushrooms to your liking.
Sauté until soft. Add 2 cups of water, I small bottle of clam juice or fish sauce, if not compliant you don't need it. Just add a touch more water. shrimp, some dried basil.
Heat until bubbly add some mascarpone cheese. I used about 1/4 cup but you can add more if you want it thicker.
When melted and bubbly remove from heat and fill up your bowl.
On top add some fresh basil and the tops of green onions. Cracked pepper if you like and a touch of Himalayan salt. Source: Facebook/LectinFreeMama
