I've avoided kale for a long time, so when I saw Dr. G's Lemony Brussel Sprouts, Kale, and Onions with Cabbage "Steak", I cringed. However, what I learned was there are varieties of kale. We look for dinosaur kale (aka lacinto or tuscan, preferable young plants. Again, many phone calls were made to supermarkets to find the type of young kale we might learn to enjoy.
