QUORN products are often associated with the Vegetarian Version of Dr. G's recipes. Quorn products are not available in Canada. I've avoided kale for a long time, so when I saw Dr. G's Lemony Brussel Sprouts, Kale, and Onions with Cabbage "Steak", I cringed. However, what I learned was there are varieties of kale. We look for dinosaur kale (aka lacinto or tuscan, preferable young plants. Again, many phone calls were made to supermarkets to find the type of young kale we might learn to enjoy.

Chicken-Arugula-Avocado Seaweed Wrap with Cilantro Dipping Sauce listed two items we had difficulty finding. One was the Bamboo mat for rolling tight seaweed wraps (ordered from Amazon.ca). The other challenge was finding NORI sushi seaweed, which after many telephone calls, we eventually found at Real Canadian Superstore.
An Internet Search for "pastured chicken, abbotsford" listed 3 local farms, one of which sells the pastured chicken and turkeys on specific dates. The second farm referred to 'grass-fed & grass-finished' beef and pork. Both farms sell bones for THE BEST Bone Broth (Plant Paradox Cookbook, page 257.
The first ingredient of Dr. Gundry's recipe (pg 328) calls for Diestel Farms Turkey Italian Sausage or Turkey Chorizo. Given Diestel is not available in Canada, you can make a few batches of Turkey Chorizo in your own kitchen. An Internet Search for 'pastured' turkey or chicken led us to a local farm that has become a new market for us.
Another Internet Search for Turkey Chorizo led us to a recipe that is tried and true, and can be made in 15 minutes.
