​Our beginnings with a lectin-free eating program began June 7, 2018.  The head chef of our household is Abe Olfert (since July 2007), a role entirely new to him, while I worked outside the home.

THE RED DOT ... where the journey started.

​Since retirement in June 2012, my BMI got further and further from the ideal for my 5'3" frame.  Seventy+ pounds overweight, prediabetic, and wary of foods that would antagonize my digestive system was my starting point.  On June 5, 2018, while internet browsing, I noticed a caption about "cutfoodcravings" which immediately led me to a post about Dr. Steven Gundry's food pyramid.  Within two days, I purchased three of his books and started the three day cleanse of his Phase One. Within thirteen days, I had lost 11 pounds.  Encouraged, Abe and I decided to go ALL OUT and revamp our entire kitchen and pantry to accommodate this new eating program.

PHASE 1: THE 3-DAY CLEANSE

The first phase of the Plant Paradox (PP) involves a “cleanse” that kickstarts the feeding of the good gut bacteria with three days of awesomeness for your gut and three days of adjustment for your taste buds.  ​​

In the first few days, a major challenge was finding products listed (on the American sites) that were not (or seemed not to be) sold in Canada.  It didn't take long to turn the challenge into a solution by creating a website for Canadians wanting to join many others in lectin-free eating and naming brands or products that are available.

The ‘carrot’ is trusting this method will improve my digestive health which, in turn, will eliminate health concerns I’ve listed here.

PHASE 2: 6 WEEKS TO REPAIR & RESTORE

"The first step is to stop eating the foods full of lectins that are continually blowing holes in the walls of your gut.  If you did the three-day cleanse, you have already begun to eliminate such foods.  
Rule #1: it's the things you don't eat that will dramatically change your health.
Rule #2: eating certain foods and taking certain supplements nourish the good bacteria (gut buddies) and their friends.

                     MAKING THINGS EASIER

 HOME GARDENS, MARKETS, FARMS & WILD CAUGHT FISH

The VegTrug(R) fits in a small space available in our back yard.  Since June 2017, having a basic produce supply of romaine, leaf lettuce, arugula, spinach, cilantro, and parsley has been so satisfying. A separate 4-tier stand accommodates our herbs.  This year we added VegTrug Barrel Planters used to grow more basil, pineapple sage, rosemary, chives, dill, and beets.

MARKETS

Fortunately we live in an agricultural region.  During April to November, a Farmers Market is available weekly where we can purchase fresh produce.  In addition, we have grocery stores that continue to expand their organic food inventory. 
​Finding frozen artichoke hearts remains a huge challenge so we purchase canned Tusca Artichoke.
